Transferring a cake from a cake turntable can definitely seem daunting. After spending so much time perfecting frosting, the last thing you want to do is mess it up!
The two key factors that impact the success of a cake transfer are a solid foundation and a solid exterior.
How to achieve a solid foundation and solid exterior: Build and ice your cake on a cake turntable and refrigerate your cake (on the turntable) for 30 mins before transferring. If you have a buttercream exterior, this will help to minimise smudginess.
Once your cake is chilled, heat up your angled spatula with hot water and thoroughly dry with your tea towel. Quickly move to your cake and run the warm spatula along all of the bottom edges of the cake. This will release the cake from the cake turntable. Keep the spatula flat and parallel to the turntable so that you don’t accidentally remove chunks from the underside of the cake.
With care, wedge the spatula under one side of the cake. Slowly and gently lift one side of the cake with the spatula until you’ve lifted enough to fit your hand in under the cake and replace the spatula. Using your hand, slowly lift the cake up, supporting as much surface area with your hands as you can. Add a second hand if your cake is big enough to fit both.
Gently move your cake to the cake stand, supporting the base of the cake with your hand/s as much as possible. Gently lower the cake, starting from one side. Don’t lay it flat, all at once. Leaving one side slightly lifted will allow you to shift the cake onto the right spot on the cake stand. Before fully releasing the cake with your hand, grab the spatula with one hand, and transfer the lifted part of the cake from your hand to the spatula. Ease the rest of the cake down with the spatula. *TIP: When the cake is sitting flat on the cake stand, but you haven’t removed the spatula yet, cover the space on the cake edge above the spatula with your finger, to keep the buttercream exterior from coming off with the spatula.
Finishing touch: Reheat your spatula with hot water, and thoroughly dry. Smooth the bottom edge of your cake with the warm spatula to tidy up any icing that may have been affected by the transfer. Protect your cake with a cake dome over your cake stand until you’re ready to display and serve.
